White Chocolate Cherry Fudge


With Valentines day just around the corner I have been trying to think of some yummy treats we can make to give to family and friends to share the LOVE.  I did not do much baking for Christmas this year because I was just so busy and did not have the time so I never did get any fudge.  So I thought why not make some for Valentines Day.  I could cut it out into heart shapes and then it would make a perfect Valentines Day treat!

Not to mention the fact that my daughter has been really bugging me about making recipes.  I think she just knows that when we make a recipe she gets yummy treats.  Um I may have to come up with some veggie treats to make instead.

I have been making this fudge recipe for years and I have to warn you it is pretty sweet.  I happen to really like sweet (my sweet tooth is the biggest tooth I have) so that is why this is one of my favorite fudge recipes.  And it has cherries in it which is a fruit so that makes it healthy right?  Okay not really but well at least there is a fruit in it too. 

Ingredients
3 Cups Sugar
1 Cup Heavy Whipping Cream
1/2 Cup Butter
1/4 Cup Light Corn Syrup
8oz White Chocolate Chips
1 Teaspoon Vanilla
1 Cup Dried Cherries

Directions
Combine sugar, cream, butter, & syrup in saucepan.
Cook over medium heat stirring continually until mixture comes to a boil.  Continue to cook for about 5 to 6 minutes until mixture reaches soft-ball stage or is at 234 degrees on a candy thermometer.
Remove from heat and wait about 10min (do not stir) then add white chocolate and vanilla.  Stir until chocolate is melted and mixture is smooth
 Add the Cherries and stir.
 Pour your fudge in a 9x11 pan that has been sprayed with cooking spray.  Then put in fridge till it has hardened.
 Use a cookie cutter to cut your fudge out into heart shapes.  Or you can just cut it up into squares.
 Eat and enjoy!
