Who does not love apple pie? Okay I will admit it is not my favorite pie but it sure is my husbands. So since we have so many apples still (Got to think of more apple recipes, I still have a TON) I thought it would be nice to make him an apple pie. But truth be told I did not want to go through all the hassle of making an apple pie, plus if I made a whole pie I usually end up eating most of it and I did not want that to happen, yes myself control is lacking!
So when I found this cute Mini Apple Pie Mold in the store I knew it would be perfect. I could make a few mini apple pies and then it is already portioned out and I won’t eat the whole thing, I could also make the filling my way and NOT add all the sugar that is normally added (I am trying to cut down on my sugar).
As soon as my husband saw what we were making he headed out to the store to get ice cream, I guess it does go really well with hot apple pie doesn’t it. However my daughter once she saw the ice cream only wanted ice cream and was no longer interested in the pie’s we made, oh well more for us! We had some extra filling left over and I have to say that I actually really LOVE just that on top of my ice cream so if you have extra filling when done making yours don’t throw it out, use it as an ice cream topper it is YUMMY! Oh I bet it would go good on oatmeal too, okay trying that tomorrow for breakfast!!
Ingredients
5 Apples
1 TBS Lemon Juice
1 Tsp Cinnamon
1 Tsp Sugar
½ Tsp Nutmeg
Pie Crust (you can make your own or use store bought)
Additional Cinnamon to sprinkle on top
Mini Apple Pie Mold
Directions
Skin and core your apples, then dice them up into smaller pieces.
Put your diced apples in a bowl and add your Lemon, Cinnamon, & Nutmeg to the bowl then stir it up.
Microwave your apple mixture for 3 min on High.

Roll out your pie crust (you can make your own but I chose to use store bought this time) and cut out the apple shapes using your pie Mold (the bottom is like a cookie cutter).
Place one apple shape crust into your form and then fill with your apples.
Add another pie crust on top and close the form and press down to seal the pie.
Just pop out of your form and place on a lightly greased baking sheet then poke holes into your pie and sprinkle with additional cinnamon.
Bake at 400 degrees for 18 to 20 min.

Remove from oven allow to cool slightly then serve warm with or without ice cream!
